PINEAPPLE JALAPEÑO SALSA

1 12 ounce can crushed Pineapple

2 Tbsp brown sugar

1/4 tsp salt

1 Tbsp white vinegar

1/2 cup water

1 Jalapeño, seeded and chopped

1/4 cup diced roasted Green Chile

In a heavy saucepan, add pineapple and juice from can, sugar salt vinegar, water, and green chile. Stir frequently and bring to a boil. Add jalapeño and remove from heat. This can be served warm or cold. For a finer salsa , place in a blender and pulse.

1/2 ripe melon, diced in fairly small pieces

3 varieties of seasonal fruit, diced

3 varieties of chile peppers (different colors)

1 cup cilantro, minced

1/2 cup Curry Fruit Pepper Sauce

Combine diced fruits and veggies in a large bowl, toss lightly with the cilantro and pepper sauce.

For chips – thinly slice plantains and fry in oil until crisp, drain.

CURRY FRUIT & PEPPER SALSA

1/2 ripe cantaloupe , diced in fairly small pieces

1 mango. diced

6 jalapeños diced

1 cup chopped green onion

1 orange bell pepper, diced

1 red bell pepper, diced

1 cup minced, cilantro

1/2 cup Queen of Farts hot sauce

 

Combine the diced fruits and veggies in a large bowl and toss lightly with the cilantro and Queen of Farts hot sauce. Makes a great accompaniment for grilled fish, pork or chicken. Queen of Farts is a mild, fruity, curry based sauce that adds little heat to the salsa.

 

SALSAS
CAJOHNS SWAMP SALSA

1 4 oz. can chopped green chiles – drained

3 pickled jalapeños – chopped

3 avocados – mashed

1/4 cup red onion – diced

6 Roma tomatoes – chopped

1 Tbsp. Hot Spots – Fireball Jalapeño Sauce

1 clove garlic pressed

1/4 cup sour cream

1 Tbsp. fresh lime juice

1 tsp. salt

 

Combine Hot Spots – Fireball Jalapeño Sauce, onions, tomatoes and lime juice, cook on low for 5 minutes. Let cool& throw in everything else. Enjoy with chips or as a condiment for your favorite meat.

1 large tomato

1 cup diced cucumber

4 Tbsp. minced onions

2 green onions, chopped

2 Tbsp. wine vinegar

1 Tbsp. chopped cilantro

1 clove minced garlic

1 tsp. your favorite CaJohns Hot Sauce (add more to taste)

 

Mix all ingredients, then put 1/2 the mixture into a food processor or blender and puree. Add puree to remaining ingredients. Let stand for 10 minutes and serve at room temperature.
