What are your hours of operation?    

Our Westerville Factory Store Hours:        

Monday – Friday 8:00 am – 5:00 pm     

Our North Market Flavor & Fire Store Hours:        

Sunday & Monday 10:00 am – 5:00 pm

Tuesday – Saturday 9:00 am – 7:00 pm

Can I tour the factory?

Yes, we would love to have you!  Please call 614-418-0808 to schedule your tour.  Tours typically last 15 minutes and we have a tasting bar to sample and challenge you.  You can purchase all of our products at both locations.



Product Questions and Information


Do your products need to be refrigerated after opening?

All our sauces are hot packed.  Only our hot sauces do not have to be refrigerated after opening, although they will stay fresher and maintain their flavor longer if they are.  Salsas, marinades, mustards, and BBQ’s must be refrigerated after opening.  Salsas will last longer if you serve from a bowl versus eating directly from the jar.  


What is the shelf life of your products?

The shelf life of our products are 2 years from the date of manufacturing.  The date of manufacture/best buy date is on a sticker on the bottom of the jar.  Spices do not have an expiration date, but are best stored in a dark cabinet.  


Where do you get your peppers?

We source our peppers from local farmers and other U.S. Farmers.


Are your products Gluten Free?

With the exception of Tiki Bar and Tiki Bar-Hot Hot Sauces, all of our Hot Sauces, Salsas, Ketchups, and Spices are gluten free.  A few products of our BBQ, Marinades, and Condiments do contain gluten.  Please refer to the ingredient listing on each product.  If you still have questions, please call us and we can help you out.


Do you guarantee your products?

Quality is guaranteed on every product CaJohns manufactures.  We guarantee quality and freshness on all products purchased directly from CaJohns Fiery Foods,,  or our Flavor & Fire Store at the North Market.  If your products are purchased through another source, you must contact them regarding expired products, broken products, wrong products, or overcharges.  


How is the Scoville Testing done?

We do use fresh and some of the World’s hottest chiles in our sauces, but Scoville Heat Units (SHU) testing is done on dried chiles only.  Sauces, Salsas, BBQs, Marinades, etc. are never Scoville tested.  Previously, labs have tried and taken a very small drop of the sauces and tested that drop.  Depending on what drop was used, it could test zero if it was the vinegar part and not the chile part.  So now all SHU testing is done on dried chiles so that the tests are consistent.  Dried chiles are much hotter because there is no water content.  That being said, when you see a Scoville Scale and people mention that the Carolina Reaper is 2.2 million Scoville Heat units, it’s not really the fact on fresh chiles.  Fresh chiles are less hot.  So when a Moruga Scorpion Chile (which has been tested at over 2 million SHU) is added to a sauce, that Scoville number is decreased considerable depending on the other items in that sauce.  Sugar drops the scale a lot.  Even our purees which are 80% fresh chiles and 20% vinegar, do not come close to the Scoville Scale of the dried chile itself.  Most of the published Scoville numbers that people are putting on their sauces, is just a best guess scenario.

We suggest that you take a look at the ingredient list.  If the chiles are listed in the first 1 or 2 ingredients, then it will be a hotter sauce.  If it is listed towards the end of the list, it will be milder.  Also be aware of Capsaicin, Pepper Extract, and Natural Flavoring.  These are all oil based Capsaicin that is added to boost the heat level, but you begin to lose the flavor when extract is added.



Online Ordering and Purchasing Questions


Do I have to have a PayPal account to place an order?

You do not have to have a PayPal account or log in to PayPal to place an order.  PayPal will process your secure credit card payment by choosing the “PayPal” option.  Choose “PayPal Express Checkout” if you have a PayPal account you would like to use.


What credit cards to you accept?

We accept Visa, Mastercard, Discover, and American Express at both our Westerville and North Market locations, as well as the online store.


How long will it take to receive my order?

Turn around time on an order is generally 24 hours.  We ship USPS and UPS.  Depending on where you are located, shipping typically takes 2-3 days from Ohio.  There are expedited shipping options available.   You will receive a tracking # from both USPS and UPS once your order has shipped.


Shipping rates seem high.  How can I get the best shipping price?

We try to price shipping to cover only the cost.  The shipping costs are based on weight of the products purchased and your location.    After selecting items for purchase, if you choose the “View Cart” option, you can estimate your shipping cost for your location.   Please note, we cannot ship to a P.O. Box if choosing UPS.  All online orders over $75.00 get free shipping except during promotional offers.


Do you ship overseas?

We only ship retail orders in the Continental U.S.  We can ship small orders to Canada, but you must call in your order so we can assist you with shipping and customs charges.  If you are an international distributor, please contact our office at 1-888-703-3473 for details.  


What if my order is damaged during delivery?
